I stumbled upon this recipe in a Cooking Light magazine. After making a few changes to the recipe, I think I perfected it- let me know what you think!
Ingredients
A dinner that tastes and looks great and is not loaded with calories! A must try for sure.
- Portobello mushroom caps, stems removed
- Small eggplant, sliced thinly, approximately 2 Cups
- 4 ounces of shredded mozzarella cheese
- 1/2 ounce grated parmesan cheese
- 1/2 cup marinara sauce
- 4 slices of tomato
- 1 avocado thinly sliced
- Kosher salt and pepper to taste
- Olive oil
- Preheat oven to 425. Salt the sliced eggplant and let it rest in a colander for 20 minutes. Afterward, Pat eggplant slices dry and arrange them on a baking sheet. Brush each slice with 1 tablespoon of olive oil. Roast them in the oven for 15 minutes, flipping them over ever 5 minutes.
- Meanwhile, prepare mushroom caps. Clean them and then brush both sides with olive oil. Sprinkle salt and pepper on both sides and place them on grill pan, gill side down. On high heat, with a grill pan lid, grill caps for about 2 1/2 minutes on each side.
- Mix the mozzarella and parmesan cheese in a bowl and set aside. To assemble rounds, flip the grilled caps over and spoon a tablespoon of marinara sauce onto the gill side of each cap. Add a slice of eggplant and a pinch of cheese on top of the sauce. Repeat, alternating sauce, eggplant, and cheese on all caps- you should end with sauce. Add thin slices of avocado to each one and top it off with a tomato slice. Garnish it with cheese and broil in oven until cheese is bubbly, about 4-5 minutes.
Cut the eggplant into thin slices, set them in a colander and add kosher salt. Let them sit for 20 minutes.
While eggplant is cooking grill the mushrooms on both sides. - After mushrooms are roasted place them on a baking sheet and start to assemble them. The first step is marinara sauce.
- Add grilled the eggplant. Season eggplant to taste with salt and pepper.
- Add cheese and then repeat steps 2 more times, starting with marinara sauce, eggplant then cheese.
- Finally, garnish the top with several slices of avocado and a slice of tomato. Add a little more cheese and then broil them for 4-5 minutes.
