Before I even get started telling you how this salad came to be, please rest assured I’m well aware of the fact that it’s not exactly healthy. However, I do consider it a healthier alternative to wing night with the guys. If the man of your house is a fan of Buffalo chicken wings, then he will absolutely love this salad.

I made this on an evening when I wasn’t sure what dinner was going to look like. I knew we had the fixings for salad and the chicken in the freezer, so I just started cooking the chicken and somehow this is what resulted that night in the kitchen.

There are a lot of people who feel as though salad is for women. In fact, I recently discovered that there is an entire Tumblr called Women Laughing Alone with Salad. I dare you to find a similar website showing photos of men eating salad.

When Graham asked me to try to incorporate salads into our meal plan more often, I was skeptical, because sometimes when I serve him salad for dinner, he is left feeling unsatisfied at the end of the meal. The challenge for me is to come up with salads that are filling enough for a hungry carpenter to eat for dinner at the end of a long work day that begins when the alarm goes off at 4:30 am.

I’m a hoarder of bananas. I never throw overly ripe bananas into the garbage because I know that someday they will make a very good banana bread! We always have a hefty supply of brownish-black bananas in the freezer, and I continually tell myself that come Christmas time, I will make loads of banana bread to eat and to give away to friends and family.

Yesterday, when I told Nate I was going to make banana bread, his response was, “Ohhhh, yummy.” The boy’s got good taste!

At the end of the day, many people find themselves standing in front of the open refrigerator, pondering its contents and willing them to form some sort of meal that will please the whole family. Although I do try to plan my family’s meals ahead of time, there are bound to be days when I’m just not sure what to cook for dinner so that all three of us will enjoy the meal together. On days like these, I make breakfast for dinner.
