I’m a hoarder of bananas. I never throw overly ripe bananas into the garbage because I know that someday they will make a very good banana bread! We always have a hefty supply of brownish-black bananas in the freezer, and I continually tell myself that come Christmas time, I will make loads of banana bread to eat and to give away to friends and family.
Yesterday, when I told Nate I was going to make banana bread, his response was, “Ohhhh, yummy.” The boy’s got good taste!

The recipe I use to make banana bread came directly from my mom, and I’m not sure what her source was beyond that.
Here is the recipe: Mom’s Best Banana Bread Recipe
Ingredients:
1/2 cup of shortening (do not substitute)
1 cup white sugar
2 eggs
3/4 cup very ripe mashed bananas (or those you pull out of the freezer, like I do)
1 1/4 cups sifted all-purpose flour
3/4 teaspoons baking soda
1/2 teaspoon salt

"Cream shortening and sugar until fluffy. (I use a mixer for this part.) Add eggs one at a time, beating after each. Stir in the banana (which you have already beaten with a mixer, preferably). Sift together the dry ingredients and add it to the banana mixture, mix well. Pour into a greased loaf pan and bake at 350 degrees. If memory serves me and this kind of memory usually does, it takes almost an hour to cook. Stick a knife in when you think it might be done. It’s not cooked all the way through until the knife comes out clean."
Mom's Best Banana Bread
