I love chocolate mousse. Although I never seem to be able to get the texture to my liking when I make it from scratch. Mousse is such an elegant dessert.
So last week when I saw a dessert where someone had taken mousse and combined it with Pop Rocks, I was instantly smitten. Pop Rocks are so fun and full of childlike delight. The combination of elegant chocolate mousse with playful Pop Rocks was definitely a match made in heaven. Like Roses and Daisies, they belong together.

I haven’t perfected this recipe yet, but I knew that you would want to be a part of the journey and not just arrive at the end destination. So, here is my first attempt at creating my own dessert marrying the two.
I started with a row of Oreos (approx 15) and processed them in the food processor. I added a couple of tablespoons of melted butter and gave it another whirl. And then I moved the mixture to another bowl.
I combined three packets of Strawberry flavored Pop Rocks with my Oreos.
I pressed the oreo crust into the bottom of cupcake liners. Here, I would do something different the next time around. I think it would work better to make these in the dishes that you want to serve them in or some chocolate bowls (I should show you how to make those sometimes).
I cheated and made my chocolate mousse from a box. You just add milk and beat it up for a few minutes. Then I scooped it into the cupcake liners on top of the oreo crust.
While I don’t prefer white chocolate on its own, I do like to make recipes with several types of chocolate in them. So I made a little white chocolate ganache, and after I had refrigerated the mousse layer for a couple of hours, I added a layer of ganache. I would skip the ganache part the next time though and just melt the white chocolate making the layer hard rather than soft.
I refrigerated the cupcakes until I was ready to serve them. Then I chopped up some fresh strawberries to garnish the top. They were everything that I was hoping they would be…elegant and fun!
My mind is already spinning with new creations involving Chocolate and Pop Rocks. But for now, here they are…Pop Rock Cupcakes.

milk for the chocolate mousse mix
1 bag white chocolate chips
fresh strawberries to garnish
Directions
- Chop up Oreos by using a food processor or the old fashioned method of plastic bag and hammer. Add melted butter and mix. Add Pop Rocks and gently fold. Don’t be nervous; some popping will occur.
- Press the oreo crust into the bottom of containers that you wish to serve your dessert in.
- Mix up chocolate mousse and add a layer of the sheer goodness to each container. Refrigerate for at least two hours.
- Gently melt white chocolate chips and let it cool slightly before adding you final layer to your cups. If you want to make the ganache rather using the melted chocolate as is then heat up 1/2 c heavy whipping cream to 1 c chocolate chips and stir well.
- Refrigerate until just before serving. Garnish with chopped strawberries and eat slowly, so as to enjoy the rocks popping in your mouth.
